I saw a lovely recipe online for a great cashew nut & quinoa salad, most exciting though was the dressing recipe that was part of it. It was so delicious that I definitely had to share it. So here it is!
I made a salad and topped it with quinoa and cashew nuts, before covering it in this gorgeous dressing. I will leave choice of salad to you though and just share the dressing recipe.
- 1.5 tbsp of lime juice
- 0.25 cups of cashew nut butter
- 2 tsps of freshly grated ginger
- 3 tbsp of tamari (gluten free soy sauce)
- 1 tbsp honey
- 2 tsp of sesame oil
- 2 tsp olive oil
- 1 tbsp red wine vinegar (optional, for consistency, you can also use water)
Mix all the ingredients together, I like to use a jar so that I can shake them up well. Store in an airtight container, you may want to make several batches at once because it is so delicious.
