Lime, Ginger & Cashew Nut Salad Dressing

I saw a lovely recipe online for a great cashew nut & quinoa salad, most exciting though was the dressing recipe that was part of it. It was so delicious that I definitely had to share it. So here it is!

Lime, ginger & cashew salad dressing

I made a salad and topped it with quinoa and cashew nuts, before covering it in this gorgeous dressing. I will leave choice of salad to you though and just share the dressing recipe.

Ingredients:

  • 1.5 tbsp of lime juice
  • 0.25 cups of cashew nut butter
  • 2 tsps of freshly grated ginger
  • 3 tbsp of tamari (gluten free soy sauce)
  • 1 tbsp honey
  • 2 tsp of sesame oil
  • 2 tsp olive oil
  • 1 tbsp red wine vinegar (optional, for consistency, you can also use water)

Mix all the ingredients together, I like to use a jar so that I can shake them up well. Store in an airtight container, you may want to make several batches at once because it is so delicious.
