Cardamom Buns

I’ve been craving a cardamom bun for weeks. I found a gorgeous Swedish cafe on the harbour arm in Margate and on a very rare week day off I decided to celebrate with a bike ride, iced coffee and cardamom bun (with a book of course), safe in the knowledge that the cafe served them. Sadly though, not that day. Since then I have been looking in every bakery and cafe window for cardamom buns but it seems I am in the wrong country (or city, the best cardamom roll I’ve had in my life was from Fabrique bakery , London but I have yet to venture to any Scandinavian countries (since I was a small child)). This story actually goes way back through to my work buddy Edd, and his very lovely Swedish girlfriend; on one of his many visits to Sweden I asked him to find me a Swedish baking book, given the country’s affinity with baked goods and ‘fika’.

Strawberry and Basil Jam

Strawberry season is here, wooohooooo! I vowed at the beginning of the year that this year I would make strawberry jam, once the season was upon us. Get ready for a selection of strawberry based recipes. It is no secret that I loooooooovveeee the combination of strawberry and basil; basil MIGHT be my favourite herb but it has serious competition from coriander and rosemary, oh and mint. What is your favourite herb? It’s like choosing between children right?!

Pancakes! Pancakes! Pancakes!

So, Tuesday will bring with it one of my favourite days of the year, Pancake Day! I love pancakes, they are somewhat of a household tradition and I can’t wait for the excuse to have then for dinner, DINNER!, on Tuesday.

We are half way through our packing, ready to move on Saturday, needless to say new recipes and blogging has taken a back seat, but don’t worry once we’re settled I’ll be posting regularly (I know, but try not to worry too much ;)).

I couldn’t resist the chance to share with you my a round up of pancake recipes though!

We’ll be having my favourite gluten free pancakes but with a topping inspired by this baked apple and cinnamon Dutch pancake (which I love but you don’t get the pancake flipping antics that are a must on pancake day). For the gluten free people out there, gluten free flour actually makes really good pancakes. Hallelujah!

Apple & Cinnamon Porridge

In this household we are big porridge fans, especially when the weather starts to have a chill (and the tingle of Christmas coming) in the air. I will always pick hot food over cold food and breakfast is no exception (ice cream is an exception though!); this is such an autumnal porridge, the apples transitioning away from summer and the cinnamon hinting towards Christmas, I love it. Apple and cinnamon is one of my favourite flavour combinations and also one of my favourite cakes.

Fruit & Honey Flapjacks

I went for dinner at my dearest Jenny’s house a couple of weeks ago and her mum had baked something delicious. They were flapjacks but they were fruity and delicious and I needed the recipe ASAP. Luckily she obliged but of course I changed it up a bit, I’m so pro real butter but I was using these for my ‘healthy’ mid morning snack so I subbed the sugar for honey. The recipe was half honey and half sugar but I made it all honey. I know that sugar is sugar is sugar but I just feel better when the bees made it. Oh, I also subbed half the dried apricots for dried cranberries because I really love dried cranberries.

Fruit & Honey Flapjacks

These are the perfect balance of nutrition and naughty, in my eyes, they are packed with fruit, seeds and nuts but also have that sweet, buttery deliciousness. These may be good for you but I’m not deluded that they are healthy in the sense that if you are torn between a banana or this, have the banana, but if you are torn between the triple layer chocolate fudge cake or the fruity flapjack then this is the choice to make because IT IS DELICIOUS. Unfortunately I was just sent a photo of the recipe so I am unable to credit it but I will do so as soon as I find it!
