Cardamom Buns

I’ve been craving a cardamom bun for weeks. I found a gorgeous Swedish cafe on the harbour arm in Margate and on a very rare week day off I decided to celebrate with a bike ride, iced coffee and cardamom bun (with a book of course), safe in the knowledge that the cafe served them. Sadly though, not that day. Since then I have been looking in every bakery and cafe window for cardamom buns but it seems I am in the wrong country (or city, the best cardamom roll I’ve had in my life was from Fabrique bakery , London but I have yet to venture to any Scandinavian countries (since I was a small child)). This story actually goes way back through to my work buddy Edd, and his very lovely Swedish girlfriend; on one of his many visits to Sweden I asked him to find me a Swedish baking book, given the country’s affinity with baked goods and ‘fika’.

Gingerbread Syrup

I wanted to share this quickly before our train to beautiful Scotland for Christmas. Are you worried that you won’t be able to have your gingerbread latte in the new year? Don’t worry, make your own gingerbread syrup (and even better your own lattes so that you don’t spend all that money in well-known coffee chains). If making lattes then you’ll want a stove top, a milk frother and some finely ground coffee ( I am a big Pact coffee fan). Make your coffee, heat and froth your milk, then pour your syrup into your cup followed by the milk and coffee. BAM. Christmas in your mouth.

Christmas Gift DIY: Gingerbread Jars

I cannot believe how quickly this year has gone! It has flown by and my gosh it has been a busy one. Especially the last 6 months. But I have finally made it online to blog (after meaning to do so properly every weekend for the last three months) to share with you a simple DIY Christmas gift idea. If you are anything like me this year, you are totally unprepared. I didn’t even make my Christmas cakes until November! Given how busy I have been, I decided to make my Christmas hampers a little less labour-intensive. These were top of my list to try and these custom spoons are the star of the show, in my opinion, I ordered them from Auntie Mims, along with some other custom bits and pieces (and no they didn’t ask me to say that, I just love their products). Coffee, Cardamom & Pistachio Brownie Cake

This cake was inspired by a bar of pistachio chocolate and some Turkish cardamom coffee I’ve had in the cupboard. The pistachio chocolate was a new brand I hadn’t seen before that I thought I would try but despite loving pistachios, the chocolate itself was substandard unfortunately. You know how the saying goes, when life gives you substandard chocolate, make a brownie cake. To me, pistachios scream “pair me with cardamom” which lead me onto the cardamom coffee in my cupboard.

Cardamon & Saffron and Rosemary Infused Gins.

I’m taking a quick break in my Christmas gift hamper series of posts to share this one with you because there is just enough time to make these before Christmas day. A bottle of infused gin would make a lovely gift. Sadly fruit infused alcohol takes many months but when using spices or herbs, you can get away with just a few days. Here I’ve chosen gin but I imagine you could used most spirits, vodka being the obvious choice. I’m a gin girl though, always (even if I drink once in a blue moon, usually Christmas day). I chose to make these two flavours as I’m a huge rosemary fan and I also love cardamom. I was originally just going to make it saffron gin because it is a beautiful colour but when I spotted a recipe for cardamom and saffron, I couldn’t think of a better combination. I didn’t end up using that recipe but I was definitely sold on the flavour. The other flavour that caught my eye was Earl Grey Gin/Vodka, the perfect gift for the tea lover in your life. I didn’t make that one though, this year.


If you start today then they will be ready before Christmas Eve! The cardamom and saffron gin is the bottle on the right and the rosemary gin, the one on the left.
