Butterscotch Pecan Cheesecake

Baked cheesecake, my current baking battle. Have any of you won at the baked cheesecake battle? I have not. I mean this one was delicious but it wasn’t quite cooked enough for my liking, I wanted it to hold a little better when cut. I made a summer fruit cheesecake the week after but that one was too cooked. Too cooked to even share with you,weep. I mean, we ate it but the edges were too cooked, the middle wasn’t too bad though, phew, at least we ate something. I made it when we had people who I’d only just met for dinner, why do things never pan out like you’d planned when you are trying to impress?!

Oreo Cheesecake Truffles

Christmas has been and gone and I am so not ready for it to be over. Having had a few days off work, I am full of ideas for Christmas gifts, recipes and craft projects that will just have to wait until next Christmas. Christmas really did creep up on me this year! I did take Christmas Eve off work though, to try to take in as much Christmas as I could; it also meant I had time to get some last minute preparation done. I baked some dog biscuits (I’ll shall that recipe soon) for the family pup and I also had time to make these Oreo truffles (that I spotted on A Beautiful Mess the other week), after the food shop and prepping a killer dinner (I’ll post that soon too). J finished work an hour early on Christmas Eve, so I went to pick him up for our first Christmas Eve living together. It was a special evening with the beginning of one or two traditions, I hope, involving mulled wine, Christmas pudding and ‘The Muppet Christmas Carol‘.

I gave these to J on Christmas Eve night, to munch on whilst we watched Muppets, they went down really well; Oreos and cheesecake are two of his favourite things. The best part is that they are super easy to make!

Cheesecake Brownies

Having blogged Banana Cheesecake Brownies the other week, I was shocked to discover that I hadn’t blogged standard cheesecake brownies! These are the brownies I’ve pulled out the bag for over 6 years and always go down a storm. This week has been the last week that I’ve been on my current training rotation at work, everyone has been really lovely and I wanted to do some baking to take in to say thanks. My colleagues really loved these and I even received this review from a colleague:

“Today I tried Holly’s Cheesecake Brownies. At first sight they looked like your common brownie with maybe an extra menacingly delicious look about them. Waiting for my tea to cool I picked up my piece and began my inspection. They were soft and slightly sticky to touch but firm and heavy. Seeing as it was already in my hand, conveniently next to my mouth and my tea taking too long to cool I decided to have a generous nibble. This unfortunately was a dire mistake. As if a creature from a horror movie I felt a feeling inside me which I did not like, I could feel myself turning into a crazed wild animal ready to ravage its prey. Luckily my prey was only a simple brownie and I left the tea and began to devour my chocolatey treat. The texture was smooth, and easy to devour, the taste strong and brilliant. I tried my best to take my time and appreciate the heavenly combo of brownie and cheesecake. As if twins separated from birth the union of flavours seemed to go together as if it was always meant to be. My last bite and I savoured the moment for as long as possible but sadly all things come to an end and my brownie high quickly ended  like being woken from a grand dream.

Banana Cheesecake Brownies

It has been a couple of weeks since I’ve made a batch of brownies, which just isn’t on. It has also been far too long since I’ve made cheesecake brownies; I was introduced to this recipe back in school and it has stayed with me ever since, it makes the richest and tastiest brownies there is.  I like to double the brownie part of the recipe but keep the cheesecake part as it is, otherwise the brownie : cheesecake ratio is all wrong for me. As luck may have it, I was short on dark chocolate and had a couple of bananas that were very ripe and needed using up. Then it hit me, banana cheesecake brownies! If I used the amount of chocolate the non-banana recipe used it would have overpowered the flavour of the banana, so really it was all just meant to be. These brownies have an extra fudginess (a new word) to them. They really were extra special and dangerously tasty. I limited myself to one little one and then quickly put them in the freezer, out of temptation’s way. These definitely aren’t ‘healthy’ or paleo but perfect for a treat, or to make for loved ones (as in this case).

Chocolate Cheesecake Bars

I live with a man whose very existence is dependent on the existence of cheesecake. He loves the stuff. I, despite being a lover of baking and all things cake, have never made a cheesecake. That was until I saw these on FoodLikeCake’s blog, three layers of chocolate! What’s not to love?!

Chocolate Cheesecake Bars

I’m not a huge cheesecake fan but these are definitely changing my mind. They were incredibly yummy and I’ve heard from the expert himself that they were exceedingly good cheesecakes. I admit to halving the recipe as they were just for one person and I didn’t want them to go to waste. I imagine they would probably freeze ok though, cheesecake usually does. Half the recipe made 12 squares.
